Three Easy Brunch Recipes for you to Enjoy

Brunch is one of those meals that can be as indulgent or as healthy as you like, with anything from a fresh Mexican salsa and tortillas to butter and bacon covered toast fair game.

And though you can spend hours preparing the perfect weekend brunch, who wants to spend their entire day off in the kitchen? Here are three recipes that you can whip up in minutes and enjoy at leisure.

1. Poached eggs on English muffins

Whoever first combined poached eggs and English muffins deserves some sort of medal as it’s one of the most delicious breakfasts you can possibly dig into.

To make your own, you’ll first have to master the art of poaching. But once you have, you can enjoy this tasty treat as often as you like. Combine it with smoked salmon, bacon or spinach for extra flavour or smother in hollandaise sauce for an extra indulgent touch.

2. Baked eggs

If you’ve never had baked eggs, you’re in for a treat. Although it might take a few goes to get the texture spot on.

You can either use a big baking tray or small pans for individual portions. Start by placing a few diced tomatoes in the bottom of the pan, crack a couple of eggs per person on top and then add whatever you like – spicy sausage goes really well, as does a nice tangy cheese.

Pop the tray in the oven for 10-15 minutes until the eggs are almost cooked, and then serve.

3. French toast

French toast – or eggy bread as it’s also known – is an incredibly simple morning meal that you can easily dress up with a few accessories.

First, soak the bread in seasoned, whipped egg then simply fry it in a pan. Top with cream cheese, bacon, maple syrup or any other ingredients that you’ve got in the fridge for a great brunch treat.
